New York Cheesecake

Ingredients

Part 1: Crust
1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons butter, melted
Part 2: Filling
4 8 oz packages cream cheese
1 cup sugar
3 tablespoons flour
1 tablespoon vanilla
4 eggs
1 cup sour cream
Topping (optional)
1 21 oz can cherry pie filling or 3 cups whole strawberries, stems removed

Steps

1: Heat oven to 325 degrees.
Part 1: Crust
1: Mix crumbs, sugar, butter and press onto bottom of 9 inch springform pan. Bake for 10 minutes.
Part 2: Filling
1: Beat cream cheese, sugar, flour and vanilla at medium speed with electric mixer until well blended. Add eggs, 1 at a time, mixing at low speed after each addition, just until blended.
2: Blend in sour cream; pour over crust.
3: Bake 1 hour and 5 minutes to 1 hour and 10 minutes or until center is almost set. Run knife or metal spatula around rim of the pan to loosen cake; cool before reming rim of pan. Refrigerate 4 hours or overnight.
Part 3: Topping (optional)
1: Top with pie filling or strawberries, stem-side down, just before serving. 12 servings.
